Cake Stacks

2 cups sugar

1 cup butter or shortening

2 eggs

2 cups sifted all-purpose flour

1 teaspoon baking soda

3 teaspoons baking powder

1 teaspoon salt

1 teaspoon vanilla

1/2 cup buttermilk

Apple Filling

1 pound dried apples

1 cup brown sugar

1 cup white sugar

2 teaspoons cinnamon

1/2 teaspoon allspice


Cake Stacks

Cream sugar and butter for shortening together. Add eggs one at a time, beating well after each addition. Sift flour, soda, baking powder and salt together. Add alternately to batter with buttermilk; add vanilla. Chill dough for 3 or 4 hours. Divide dough into 6 or 7 parts. Use well-floured board, on which to roll out layers. Bake on cookie sheet until slightly browned at 450° for 10-15 minutes. Spread each layer with dried apple filling. Let stand in a covered container for at least 12 hours before cutting.

Apple Filling

Wash apples; cover with water and cook until tender. Mash thoroughly; add sugars and spices. Cool before spreading between layers.
